Another yogurt question

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Another yogurt question

I have been making the yogurt from a large tub of Yeo-Valley... I make it 3 or 4 days in a row and (so far) I have only used the Yeo-Valley as the starter.

What I want to know is... how long can you keep the yogurt you make? Can you keep using the last batch to make a new batch?

If I make it every 3 or 4 days, will I never need to buy yogurt again?



By the way I made my first full-fat batch yesterday... so thick, you could slice it... and it was delicious... though I am finding that my homemade is not as sweet as Yeo-Valley :?

You can keep using one batch to make the next. Sometimes to be on the safe side people will freeze several separate spoonfuls in case something happens to ruin a batch. Then you can thaw out one spoonful and continue. My homemade ones are a bit tarter too.

It sounds as though yours is already quite thick, but if you like you can strain it in the refrigerator overnight (fine clean cloth--unscented laundry soap to wash the new cloth, or a coffee filter in a strainer) and make a soft cheese. This is good plain or with herbs added for a more savory cheese.

You can continue making one batch from the last.

I've also used Yeo Valley to make my own, and rather then finding it less sweet, I find it less tart. Still very yummy though.
