Vanilla refrigerator biscuits
cooking time 12 mins makes 45
225g (8OZ) plain flour
5ml (1tsp) baking powder
100g (4oz) butter
175g (6oz) caster sugar
5ml (1tsp) vanilla essence
1 egg beaten
1 sift together baking powder.
2 rub in butter finely.
3 add sugar. mix to a dough with vanilla and beaten egg.
4 shape into a long sausage, transfer to a lenght of aluminium foil.
5 wrap foil around sausage and twist ends. work backwards and forwards
to form a roll about 5cm (2") in diameter
6 refrigerate for 1 hour
Baking
the full quantity of mixture makes about 45 biscuits
slice thinly and keep well apart for spreading on a greased baking tray or sheet and bake for 10-12 mins at 190o (375F) mark 5 or until pale gold
cool on a wire rack.
store in a air tight container.
if any mix left keep in the fridge and use daily for up to a week

follow recipie and add 50g coconut (2oz)
