smells from the kitchen

Post: # 81339Post old tree man »

wow !! janes baking today and the smells from the kitchen are great, she's baking biscuits, a lovely old recipie she found, the nice thing about the recipie is that any remainder of the mix can be stored in a airtight container in the fridge and used daily for up to a week

Vanilla refrigerator biscuits
cooking time 12 mins makes 45
225g (8OZ) plain flour
5ml (1tsp) baking powder
100g (4oz) butter
175g (6oz) caster sugar
5ml (1tsp) vanilla essence
1 egg beaten

1 sift together baking powder.
2 rub in butter finely.
3 add sugar. mix to a dough with vanilla and beaten egg.
4 shape into a long sausage, transfer to a lenght of aluminium foil.
5 wrap foil around sausage and twist ends. work backwards and forwards
to form a roll about 5cm (2") in diameter
6 refrigerate for 1 hour

Baking
the full quantity of mixture makes about 45 biscuits
slice thinly and keep well apart for spreading on a greased baking tray or sheet and bake for 10-12 mins at 190o (375F) mark 5 or until pale gold
cool on a wire rack.
store in a air tight container.
if any mix left keep in the fridge and use daily for up to a week

variations
follow recipie and add 50g coconut (2oz)
.............................. 50g chocolate (2oz)
................................ 50g ginger (2oz)
................................ 50g raisin (2oz)

We hope you enjoy these biscuits as mush as we do and our grandchildren do
 all the best

Sounds yummy - may have to try it at the week end!
Let us be lovely
And let us be kind
Let us be silly and free
It won't make us famous
It won't make us rich
But damn it how happy we'll be!

 I have that recipe too - if you want to keep the dough for longer it freezes well too, I used to make a batch and then divide into four - two for the freezer, one for the fridge and one for 'now', flavouring each quarter differently
