I've always assumed shortening is the equivalent of 'cookeen', so I use half butter, half lard....

A 'cup' in this house is 200mls, so 5/8 would be 125 mls.

Hope that helps!

We've had this discussion before, SE, it's a tricky one. American cups and UK cups are slightly different ones 225ml the other 250ml ( i think the US one is the larger) so depending on where your recipe's from it will be one or t'other. I'd try the smaller and if the mixture looks too sloppy add a bit more.

Shortening can be anything from dripping to best butter

See Maggie - that's why I always use 200mls as a cup....

5/8 of 250mls = 156.25mls
5/8 of 225mls = 140.625mls

So that's why 200 mls is a cup here - bloody easier to work out!
But then as you say, if it looks too stiff or sloppy, adjust accordingly

I hate recipes like that - how on earth do you get hard butter from the fridge INTO a bloody measuring cup in the first place? It's like stupid recipes calling for tablespoons of butter, oh come on.............. Just give a weight!
