Yummy tea!

Post: # 162344Post Milims »

I have some veg left over in the fridge so I made it into a really yummy and very easy hotpot kind of thing.
Finely chopped leek sauteed in olive oil. When soft add plain flour and make a roux. Gradually add veg stock to make a sauce. Add a tub of quark and a small amount of cheddar cheese.
Meanwile cook/steam what ever veg you have handy - I had carrots, turnip, cauliflower, broad beans and cabbage. Steam some sliced potatoes at the same time. Once done put into an oven proof dish, pour on the sauce and top with the sliced potatoes and some grated cheese. Pop into the oven until browned on top.
It's really tasty, filling and a good way to use up lots of veg.

Milims, I made your 'Yummy Pie' this evening. It is delicious

I used potato flour to thicken and put in carrots, mushrooms, broad beans,
cabbage and sugarsnap peas with the leeks and some onion. Thats what
I had left in my veggie box. Nice big pie so I have enough left for a couple
more days! I am the only veggie in this house!

I shall definitely make this one again. Got any more of these lovely
recipes?

Thanks so much
