You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Ice cream recipe? Anyone?

Before I go scratching around in my recipe books, does anyone have an easy tried and tested ice cream recipe? I have made an ice cream this week but it could do with being a bit lighter. It weighs a tonne!

It's delicious, but then it has got a pint of cream in it, along with a bag of Maltesers and six egg yolks. (Yeah low calorie ~ NOT) :shock:

Anyone ever made it with just milk instead of cream?

If I remember correctly, I used a mix of cream and milk - plus loads of fruit. Basically you could make it just from banana milkshake, or a fruit yoghurt... A couple of times at shows there was this stall selling fresh frozen yoghurt - they had the frozen fruit there in bins, so you could choose that, and they mixed it in with the yoghurt there and then as it came out of the ice cream machine - delicious. Really fruity, and nowhere as sweet as it usually is. In this weather, why don't you keep trying out a different one every day?

I discovered some new ice cream from a local producer today - very, very, very good. Local cream, rasberries and oats (Crannachan Ice Cream, very Scottish). Just as well I can't buy it next door, otherwise I'd be tempted to have it too often. It's got toasted oatmeal in it.

Thanks Ina, I will have a go at just freezing down a mix of fruit/milk or yogurt. I have had frozen yogurt before and it was very refreshing.

I like to be able to short cut time consuming recipes. I'll return from my Ice Cream Lab and report back.

That oatie ice cream sounds absolutely delish. 8)

Yes, funny enough Scotland has quite a few very good ice cream producers - and that with our not terribly high temperatures! Cream o' Galloway is one of my favourites; that's an organic farm (in Galloway, of course!) with ice cream production and cafe plus some attractions for the kids, farm walks etc. I think they've just won a small business award or something like that. Gave several local people employment, attracted further tourism into the area, and are using their own produce in a very positive manner.

I take it you have a proper ice cream maker? I used to improvise with salt water, frozen in the deep freeze. It stays liquid even at -20 degree, so you then put a container with the ice cream mix into the bowl with the frozen water and keep scraping the ice cream from the sides. Works a treat, and you can just re-freeze the water for next time.

Due to the heatwave (in Scotland!!!! - heard on the radio it was 30 degree at Glenlivet today!), I tried frozen strawberry yoghurt today. It was great... Not as creamy as commercial icecream, but then, there was no cream in it, no sugar, just strawberries, yoghurt and honey. Delicious :icescream: :icescream: :icescream: and terribly healthy, so no excuse not to eat a lot of it!

I used equal amounts of strawberries and (wholemilk) yoghurt - 250g each, to be exact - plus one tablespoon of honey. Whizzed the fruit and honey together, mixed in yoghurt and froze (with my salt water method.)

Thought I'd bump this up rather than starting a new thread.

I've just made banana ice lollies and thought I'd share. So simple - just stick a banana into the freezer - simple as that. Delicious, but a bit tricky to peel cos it's so cold.

I make fruit 'ice cubes' too - sliced lemons/limes/oranges etc - open freeze then put into a storage box in the freezer. Lovely, looks good, tastes good and doesn't water your drink down.

Hoping that we get some warm weather soon!! Ina... I've tried the cranachan ice cream... it really is delicious!!

That's a novel idea! Could you peel them first and wrap them up in a bag or something I wonder?
