You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Black Bean Hummus

Forgot all about this recipe but, didn't forget how good it was. :-)

BLACK BEAN HUMMUS

INGREDIENTS

1 clove garlic
1 (15 ounce) can black beans; drain and reserve liquid
(I use dried beans in a similiar amount, soaked & cooked; about one cup)
2 tablespoons lemon juice
1 1/2 tablespoons tahini
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
10 Greek olives

DIRECTIONS

1. Mince garlic into a bowl or blender. Add black beans, 2 tablespoons reserved liquid, 2 tablespoons lemon juice, tahini, 1/2 teaspoon cumin, 1/2 teaspoon salt, and 1/8 teaspoon cayenne pepper; process in blender or mash until smooth, scraping down the sides as needed. Add additional seasoning and liquid to taste. Garnish with paprika and Greek olives.

I found it on the internet a few years ago.. and I thought it was so much better than the boring old chickpea hummus... it's a bit a funny colour but, delish.LOL
