I was first introduced to these when I moved to Blackpool at the age of 37.... it certainly wasn't something I'd come across in the 'proper' chippies of the south-east of england.... and no, I didn't like 'em one bit.
Chips shops 'up north', especially in a seaside town like Blackpool & Fleetwood just up the road & with a Harry Ramsden's there as well, are complete & utter rubbish!!! And what's the deal with Whitby? Total Cr@p...... Large cod? Ha!
WHERE is the Rock/Rig on the menu??? What about saveloys??? Skate wings?? Why are they deemed a 'luxury' item?? And gherkins - why no gherkins???
Pffftt... you don't even get a choice of fish in most Blackpool chippies - it's all cod/haddock & whatever comes is what you get....

Now... patties are really pastry cases filled with veg & a gorgeous yellow colour, and can be found here when I can be bothered making them

And yorkshire puds? Simple - equal amounts in a cup measure of flour, eggs & milk - add salt, pepper, any herbs, whatever, mix well, leave to stand for 30 mins for the gluten to absorb & make sure to NEVER use oil - goose fat is the very best!!
I don't even make mine any more - Leah (5 yrs old) makes ours now & they always rise & are great!!
