Too many eggs?!?!

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Our chickens have been very busy last few days ad so we are left with a surplus of eggs! Any ideas for recipes that require eggs/will store well/fine for freezing??

I think we have had these lists at some point before, not that I am complaining :flower:

I think if you beat the eggs then you can freeze them for baking (but I might be wrong) If I ever get any spare eggs (any eggs would be a good start :roll: ) I will be pickling them. :mrgreen: though I don't know how long they keep?

Yes you certainly can freeze them but you need to add either a pinch of salt or a pinch of sugar when you lightly beat them, apparently that stops them becoming a solid lump (but I have never tried it without).
The salted ones can be used for omelettes or scrambled and the sugared ones for baking.

Ann, I have a few pickled eggs left in a jar that must be 2 years old and still wonderfully edible.

i freeze them - just beaten nothing added. they are only good for baking etc then though, but still useful

How about lemon curd?
I made my own recently, with lemons that I grew in my conservatory. Lovely!

Ice cream - lots of eggs used up there.

Noodles:

1 egg
pinch salt
flour

Scramble the egg with the salt. Start adding the flour, a spoonful at a time, mixing well, until it forms a stiff dough. Knead, roll out thin, and cut to shape. They can be dried or stored in the freezer.
