I am quite proud of my Beet wine.
this is one of my first posts.

Since gooseberries are regional and very seasonal.
basically you could substitute Lime zest and juice to replace
the gooseberries for the tartness and acidic balance.
I use two limes per gallon.
when I use limes, I call it "Sublime" Beet wine.
