I've never been a big courgette fan, but Muddywitch introduced me to the yellow variety last year & yes... they were nice. I wouldn't want to add them to everything though, but sliced raw & in a salad - yum!!
Even the little one loves them raw & has demanded that I grow them again this year, plus green ones and 'is there any other colours Nan?'
Grated beetroot is nice. Apple (coated with lemon juice), but then they're normally eaten raw. Kohl rabi (grated once again) is gorgeous. Thinly sliced white cabbage, as long as it's mixed with other stuff. Carrot, leek, ... I could go on ... and on. I think it's probably safe to say to try anything raw (except potatoes, 'cos you need to destroy the starch).
