Just another tip with burgers - as mentioned before, they tend to fall apart on the grill. However, if you shallow fry them first, and then just finish them off on the bbq, they are much easier top handle!

A white kind of cheese, quite solid, sold in plastic packs like feta or mozarella... Unlike other cheeses, it doesn't melt so much when you fry or grill it, but turns nicely brown and is quite addictive!
The only problem I have with it is that it's rather salty.

I usually just put slices of aubergines, courgettes, peppers, haloumi, wedges of onion etc on separately as they all tend to cook at different times and just stick mushrooms on a skewer. Very occasionally, I par-boil some potato wedges then cover them in oil and spices and put them in an old tray on top of the barbie. They're lush.

And it's from Cyprus - anyone know if it is a sheep's milk cheese like feta? OK I could go downstairs and look on the packet but I can't be bothered right now! Feta is salty too, but I like that about it. Goes really well with the sweetness of roasted or griddled veg like tomatoes, red peppers and courgettes.

Yes, it's sheeps' milk and really easy to make - if you can access sheeps' milk of course
I managed to buy it once, frozen, from the farm shop at Chatworth House estate. Hellish expensive from there, but it was good fun to make.

Thanks for that ... I never thought of making haloumi but put it in google and out came ... 84,100 results!
I had a quick look at some recipes on a site called gourmetsleuth.com which I thought I'd mention as it also has some videos on how to make various cheeses which might be interesting to someone else out there
