Need inspiration for vegetarian daughter

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Have you tried pauls famous vegie burgers yet?

Otherwise corn on the cob is great on barbecues.

I have a burger recipe too

1 tin kidney beans
1 tin chick peas (or what ever othe beans you like... I actually use the equivalent of dried beans instead, but tinned makes it a simpler recipe)
2 slices of bread
2 onions
2 egg
1 tbs coriander seed
1 tbs cumin seeds


Chop all of the ingredients up, stick them in a food processor, shape into burgers and cook. Best to shallow fry them or grill them with a little bit of oil they won't work on a barbecue.

Once you get used to this recipe, you can add different veg to it too.

Veggie Kebabs were always a favourite with me when I was veggie.

Just chop up loads of onions, peppers, courgettes and thread them on a kebab stick with cherry tomatoes and mushrooms... I also liked soaked dried apricots and pineapple on my veggie kebabs as well but then I am strange lol

Slice up some firm tofu, sprinkle with BBQ spices and BBQ until crisp on the outside?

Portobello (or just HUGE) mushrooms with a hunk of garlic butter could be nice if she likes garlic mushrooms? Just BBQ them gill side down for a few minutes then turn over, knob of garlic butter and heat until cooked to her liking.

There's Ainsley Harriots Korma Burgers?

1 onion finely chopped
25g butter
1 garlic clove crushed
2 med courgettes grated
225g carrots grated
400g tinned chickpeas rinsed and drained
11/2 cups fresh breadcrumbs
2tsp mild or korma curry paste
2 tbsp crunchy peanut butter
1 med egg yolk
3 tbsp chopped fresh parsley
salt and pepper.

Fry the onion until soft and golden, add the garlic courgettes and carrots and fry for 5 min or until soft.

Set aside to cool. Blend the chickpeas in a food processor until smooth. Place them into a bowl and mix in the cooled veggies and remaining ingredients.

Shape into patties (6-8), cover and chill for at least 2 hrs or until required

Brush each side of patty with a little oil and BBQ for 6-7 min each side.


Not tried them myself but always thought they'd be really nice.

Grilled Seitan With Crisp Apple Salsa

Servings: 4
* For the Salsa:
* 2 cups diced apples
* 1 Anaheim chile pepper, seeded and chopped
* 1 cup diced yellow onion
* 1/4 cup lime juice
* 1 tbsp peeled and finely slivered fresh ginger
* Salt and pepper, to taste
* For the Seitan:
* 1/4 cup dry white wine
* 1/4 cup apple cider
* 1/2 tsp grated lime zest
* 1/2 tsp salt
* Dash of pepper
* 2 tbsps olive oil
* 1 lb. seitan

For the Salsa:
Combine all the ingredients and allow the flavors to blend for approximately 30 minutes.

For the Seitan:
Combine the wine, apple cider, lime zest, salt, pepper, and olive oil and pour over the seitan.
Marinate for 20 to 30 minutes.
Drain and grill over medium-hot coals, turning once, until done.
Serve with the salsa.

Haloumi cheese kebabs are fantastic, you can put any kind of marinade or flavouring on them. Put onions and peppers in between the cheese cubes.

I agree on homemade veggie burgers always falling apart. Whenever I've made felafel or veggie 'meat' loaf the same thing happens. That doesn't matter so much cooked indoors but it's impossible on a BBQ!

You may or may not know this thought but make sure anything like wine, cider and cheese is vegetarian.

They use isinglass in wines which comes from swim bladders of tropical fish and animal rennet in cheese.

As I say, you might know this already but when I was vege it was always a minefield as people would just think anything not made from meat was suitable for vegetarians.

Big mushrooms and Halloumi as have been suggested.

Corn on the cob chucked on the grill still with the leaves round the cob - the leaves burn but the corn kernels inside don't and steam wonderfully.
Long sweet peppers roasted nice and slow over the bbq work well.
Asparagus is good even though it's out of season now.

Don't forget dessert - chunks of fruit such as pineapple and peach with a sprinkling of sugar over the top for a sweet hit at the end of the meal.

In the 80s??? I must be very behind the times as I only discovered it in her Summer Book :oops: and have only recently found it for sale in Lidl (not normally available here in France) as they do a Greek range occasionally called Eridanous - it was for sale for much cheaper than it costs in England and last time I was there (Lidl) they had that brand of Feta as well, much cheaper than normal too and all actually MADE IN GREECE! :cheers: Good grief we might be able to buy real Greek yoghurt soon!!! :shock:

Ok if we are on to dessert the BEST BBQ desert I've ever had was BBQ banannas, do them til they are black, split them down the middle and serve with brown sugar & cream- vegetarian or not they are LOVELY!

I am also a big fan of haloumi & veggie kebabs.

When off to camping parties in my 'yoof' I would pop some chopped ginger, chilli, garlic & a sploosh of oil in a big tupperware box and then chop peppers, onions, courgette, haloumi to similar size pieces & put them & some mushrooms in the tub to marinade on the way. Easy for everyone to have their own preference by making up the skewers just before cooking.
Why don't I make these any more? :?

Thanks for the reminder & also baked bananas as haven't had those for ages either.

Just another tip with burgers - as mentioned before, they tend to fall apart on the grill. However, if you shallow fry them first, and then just finish them off on the bbq, they are much easier top handle!

A white kind of cheese, quite solid, sold in plastic packs like feta or mozarella... Unlike other cheeses, it doesn't melt so much when you fry or grill it, but turns nicely brown and is quite addictive! :mrgreen: The only problem I have with it is that it's rather salty.

I usually just put slices of aubergines, courgettes, peppers, haloumi, wedges of onion etc on separately as they all tend to cook at different times and just stick mushrooms on a skewer. Very occasionally, I par-boil some potato wedges then cover them in oil and spices and put them in an old tray on top of the barbie. They're lush.
