Has anyone got a foolproof flapjack recipe?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

I got the recipe I use from my nephew who made them in home-economics and he whips them up whenever we visit :cheers:

I think it is probably the easiest ever - helps too that it only has 3 ingredients, all of which I always have in the house... and my MIL who is a coeliac can eat them too :cheers: :cheers: :cheers:

Its one of the many slang terms for pancake.

(Unless pancakes are also something different there?)

No, pancakes are the same... though sometimes we have them thin and large (almost like a thick crepe) and the smaller fatter ones are often called scotch pancakes.

What is it they say about separated by a common language :lol:

I Have a microwave method ITH
In micro blaster melt 3oz butter
add 3oz sugar and 2tbsp golden syrup melt again
add 6oz rolled oats mix pat down in microwave proof dish and cook on high for 3mins
You can add any type of dried fruit and they are yummy, also good for those last minute lunch box items!

I might have to give this one a try, not overly keen on microwaved food but since we overcooked the last lot I suppose it's worth a try :D

Have you tried this recipe with Honey instead of golden syrup?

Whereas in staffordshire a pikelet has currants in it and is sold alongside oatcakes as a regional delicacy.

Well, we finally found a recipe that works then we added Almonds, Cherries and Almond Essence... oh dear... oh dear oh dear oh dear!

Made some a while ago with cranberries in... lovely, made some today with cherries and almonds for a picnic next week if the weather holds out... and of course OH's willpower :mrgreen:

I can let you know the secret recipe though:

The recipe makes enough to fill a 8 x 12" (18.5 x 29cm) Swiss Roll tin

225g Butter (or margarine)
375g Rolled Oats
75g Caster Sugar (we will drop this down next time as it's very sweet)
6tbsp Golden Syrup
1 cup Glace Cherries, quartered
1 cup Flaked Almonds
1tbsp Almond Essence / Flavouring

Preheat the oven to 200 degrees C / 400 degrees F
Melt the butter, sugar and syrup in a pan.
Mix the remaining ingredients together giving it a good mix around to distribute the cherries and the almond essence / flavouring.
Once the butter, sugar and syrup have melted together and there is no more crunching sugar crystals, slowly pour it over the oat mixture stirring well.
Combine well making sure all the oats are covered.
scoop out into a greased tin and spread out well packing it down slightly until it is level.
Bake for 20 minutes or until golden brown.
Leave in the tin until cold and then turn out and slice with a sharp knife!

The mixture looks really over soggy when you are mixing it but this is exactly right and it gives you a lovely, soft, slightly chewy bar!

Probably keeps a while but it's never lasted long enough to find out how long :lol:

If you want plain just leave out the essence / flavouring, almonds and cherries or substitute them for whatever you want... chocolate chips, hazelnuts... go wild!

Mmmmm - dee-lish!
I find the BEST Flapjack recipes are all made with Golden Syrup.

Have you tried this recipe with Honey instead of golden syrup?

I started to make flapjacks the other day and discovered, too late no golden syrup.....tried honey yes it works a treat and is verrrry yummy :cheers:

We tried honey... I didn't like the taste at all but then I'm not a great honey lover to be honest unless it's Mead :mrgreen:
