Cordials

I made a pretty good dandelion cordial last year and will be making more this year (though adjusting the sugar levels), I have also just stumbled across a good looking recipe for rhubarb cordial (involving ginger and cloves)

My question is, there seems very little difference between cordial and wine making so how can I store my cordials without them fermenting? I was planning on bottling them in plastic bottles but can do glass, I suppose then I can sterilise them in the oven and add the liquid while warm (as in Jam making) to stop the yeasts growing?
My worry is the bottles exploding :pale: Last year I froze them in plastic bottles but I only have a small freezer and this is not ideal.



On a side note - I plan on getting down to the brew shop at the weekend to buy my first wine making kit too :cheers: I have all my Dads old recipe books for wine but sadly the equipment is long gone.

needs to be very high sugar levels to stop them from fermenting.
