101 Delicious Recipes for Potatoes

101 Uses For is popular and let's hope it stays that way. Our second book is presently called 101 tips for self sufficiency; we will certainly dip into this section for ideas. So post away and let's try and get at least one thread up to 101.

101 Delicious Recipes for Potatoes

Post: # 82004Post Amaranth »

We had a good potato harvest on the allotment this year and are searching for new things to do with them. We enjoy the usual sorts of meals with them and would enjoy something different. Some to start:

1. Baked with butter
2. Baked with a sprinkling of grated cheddar cheese
3. In mixed vegetable soups
4. Mashed half and half with cooked cauliflower
5. Chips sprinkled with chili powder spice mix

And we'd like to try some soups which feature potatoes and one or two other vegetables as well as a variety of potato salads for the summer if anyone has suggestions or recipes for those.

7. Potato, leek and stilton soup (will dig out recipe later).
8. Potato gratin.
9. Bubble & squeak rosti cake things.

We love our alternative to chips.

Boil up potatoes cut into large pieces

Mix some homegrown garlic minced up, with some parsely and chives also direct from the herb garden, into some olive oil ( I usually bottle up some chillies from the garden into some oil - leave it for a month and then use that) - fry your boiled potatoes in the oil and herb mixture and serve with meat and fish and anything else you like - lovely.

I think that's number 10.

My bf's mum is Swedish and I once ate that thinking it was normal potato gratin.... Was rather surprised to find it was full of anchovies (of which I am not a big fan..).

Yes it is a Swedish recipe - and the cream and spuds seem to take the saltiness out of the anchovies (although I love them anyway!)

I'd like to try the potato, leek, and stilton soup recipe. Sounds perfect for this time of year.

The Jannson's temptation would be good too. We really like anchovies a lot.

Does anyone have any potato salads with some different additons to them?[/quote]

19. Italians do a potato salad that also has beetroot, gherkins, capers and whatever else you fancy in it. I don't know if this a bonafide Russian dish or what the Italians think one would be.

20. My version of a dish I once had in San Francisco called spudaramma and it's a really good hangover cure. Parboil then fry, or just fry, chunks of potato (depending on how serious your hangover). At the same tine fry up some chilli and onion and pour can of tomatos or sauce on them and leave to simmer. The potatoes are ready when they begin to crisp (you may need to add more oil or butter to achieve ultimate crispiness) but you've got a hangover so it's medicine. Pour them in a bowl, top with spicey tomato sauce, a handfull of grated cheese and some soured cream if you've got any.

21 Fadge.
no. seriously.

take left over mash, add 1 egg yolk (or 1tsp arrowroot which has been dissolved into about 1 tbsp boiling water and stirred until it's jellified) . keep adding small handfuls of rolled oats until the mix forms a sort of dough. take handfuls and roll into balls. flatten with your palm.
fry in bacon fat (or, you know, whatever for those who are veggie).

it's great.
