Oatmeal Biscuits for Cheese and Biccies

Old mother hubbard went to the cupboard to get her poor child some biscuits for cheese. Dad had scoffed the lot, so I made these!

Needless to say they have nearly all been snapped up. A resounding success.

These are a slight adaption from Delia Smiffs reseep.

Preheat oven to Gas Mark 4. Grease a couple of flat baking trays.

You'll need.

6oz wholewheat flour
2oz Oats (I didn't have any oatmeal)
4 tsp soft brown sugar
Half tsp salt
Quarter tsp of hot curry powder or similar.(yet again had to add something spicy from my herb cupboard)
4oz butter or marg
A little milk to bind it all together

Mix all the dry ingedients together, then rub in the butter as if you were going to make a crumble mix. Then add a little milk at a time until you have a moist lump of dough.

Cut it in half and roll out the first half on a well floured surface. I made the pastry quite thin about one quarter of a cm. Then use a cutter to cut out your circles. You could just cut them into squares. I used a jam tart cutter! Slide the pieces up with a palete knife and place them on the baking tray. Repeat with the second half of the dough.

Prick them all over with a fork and put them in the oven for about 20mins until they are just turning light brown.

Take them out and put them on a cooling tray.

Then, if they don't all get eaten that evening, put them in an airtight container. :wink:

Serve with a nice bit of your favourite cheese or pate. Or just with butter.

I was really surprised just how good they were. I'll definately make them again.
If in doubt ~ use a hammer!
