Butter nut squash and garlic mushrooms

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Butter nut squash and garlic mushrooms

Cut a BNS in half lengthways and hollow out seeds
score the flesh with a sharp knife and drizzle on some olive oil
bake in a moderate oven until the flesh is soft and the score marks start to separate
meanwhile sautee some mushrooms in butter, garlic and a little olive oil ( I also like to add some finely shredded leeks, but some of my family are fussy and don't appreciate onions etc quite as much as I do), stir in some creme fraiche/fromage frais/cream cheese then plonk (good cook's term that) in the hollow of your BNS.
Return to the oven for a little longer
Nice served with herb salad or garlic bread
