Kiwifruit Jam???

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Kiwifruit Jam???

Hello all..

I´ve got loads of kiwis and was wondering if I could make jam, problem is I don´t have the pineapple juice or pectin recommended by recipes I have seen. I have however got a load of lemons too.

Does anyone have a simple recipe or any experience (bad or good) making kiwi jam? I´m tempted just to boil them to temperature with equivalent amount of sugar and see what happens, perhaps add the juice of a lemon.

Or does anyone have a suggestion as to what I could do with them, I need to preserve them but only have coldstore, no fridge or freezer.

I've never made jam with them but I know that if you add them to jelly they prevent it from setting. I wonder if you have similar problems with jam?

Perhaps I´ll have to dust down my wallet and get the pectin after all.

I get pectin from lemon pips when making marmalade

boil them in a seperate pot in a little water for 10 mins and add to your jam. I don't know if it would work for Kiwi jam though.

Let us know how you get on I have a husband who always buys kiwis when they are reduced but doesn't eat them... I do get bored of Kiwi smoohie sometimes

Firstly, I'm from Aotearoa NZ where we grow lots and lots of kiwiFRUIT. We call it kiwifruit here because a kiwi is the bird.

When I was growing up we used to get alot of kiwifruit so Mum would make kiwifruit icecream, which was really yummy. I don't know what she did, but it was the freezer method with a whack of cream as I remember the icecream being creamy rather than icy.

She did make kiwifruit jam, but buggered if I know how she did it. I think it was a Digby Law recipe, but I'm not sure. The jam was ok, but I preferred the icecream, which was creamy and tart at the same time. Delish combo.

Thank you all.

I made the Jam with Certo pectin in the end. Very tasty it is too.

Tell me more about making pectin from lemon pips - how many do you need for how much pectin?

Kiwifruit icecream sounds good too, but sadly no freezer - kind of a blessing or it´d be full of sausages and icecream and I´d be huge :roll:
