Esmerelda's End of the Week soup

Any of you who read the "World's End " series by Monica Dickens will recognize the title.

Goes like this, go to the fridge and pull out all the little bits of meat and veg
that have accumulated as leftovers, chop it all up and put in a large pot with enough water to cover-then look for your choice of herbs and either some barley, rice or pasta to put in it.

Cook main pot of soup for 2 hours, then add your barley or whatever and more water or tomato juice, cook another hour for barley, 20 min for rice and 10-15 min for pasta.

That sounds a great idea, except it impllies an organised weekly food regime which I still find impossible to implement... I used to be so organised with food but at the moment my kitchen is so tiny, I don't want to cook And my waistline is shiowing it! Roll on end of April and the new house.

Nope-you can make it with almost anything-sometimes I use up cans of veg from the cupboard (we're on disability so qualify for the Food Bank-hence too many cans to mention)

An onion, some garlic, just whatever I have in the house. And I've got soup.

So no, its not regimented and for one person-you could freeze a lot as my normal size recipe around here makes 3 quarts! :lol:
