Preserving Peaches Bottling Question

Hello. I've got a glut of peaches and for speed and space I am wondering if it would work to stew the peaches first and then put them in bottles and then preserve them in my Fowlers Vacola?

You could bottle them with spirits, like vodka, or peach schnapps.
That'd be yummy!
