Leek, Potato and Mushroom Soup

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Leek, Potato and Mushroom Soup

Made it tonight, there's a mug of it sitting next to me, being eaten slowly!

Ingredients:

3 skinny leeks
3 good sized, but not massive potatoes
a good handful of mushrooms, and then another good handful to make sure.
Some milk
Some butter
Some plain flour
Veg stock (about a pint).

Cut the potatoes into small pieces, leave the skins on if you want to.
Boil the potatoes til they're soft, but still keep their shape.
Melt the butter in a saucepan, when its melted, add enough flour for ti go to a breadcrumb texture. The add some milk, i say some because i just splash it in. Stir with a whisk to get out any lumps.

After a few minutes of stirring and heat, the sauce should start thickening. That's the time to put in the potatoes, leeks and mushrooms. Then, whilst stirring with a wooden spoon, slowly add the vegetable stock. The sauce should thicken up again after a few minutes.

Cover and simmer for five minutes or so, then sserve in a big mug with a spoon.

Yummy!

And by coincidence, I made (and ate :wink: ) leek, mushroom and chicken soup for lunch.
