Marrow recipes

Any recommendations for how to cook a medium marrow? Have checked some recipe sites, but would love to know if anyone has tried and tested favourites.

I would try making marrow rum (as described in http://www.selfsufficientish.com/forum/ ... php?t=3112,
but I figure with sloe gin and my first batch of cider we have enough alcoholic experiements going on...

There's a marrow and ginger jam recipe somewhere on the forum you could search for, it's yumptious.

Other than that peel off the rind, slice the flesh thickly, dress it with vinegar and salt, and then throw it out as good for nothing.

(I'm not fond of marrow - in my mind it's just what happens when you forget to pick courgettes)

I don't throw any marrow skins out as my goats love them

Maggie, if you're ever passing through Carlisle, I have a large marrow that has been making it's way around the kitchen like it is on a vast pilgrimage (probably trying to get to the cooker). As I have good intentions, but am the only eater of marrows in my house, your goats could have it. Combine it with a trip to Doves for a cup of Fair trade coffee and a scone, and a look round the world shop (it's a long drive for a marrow!)

the only time we've had marrow was stuffed and only my son really lliked the marrow

I love stuffed marrow. I put a recipe for meatloaf which I used to stuff my last marrow mmmm lovely.
I find it's softer than courgette, but with a similar taste.

grow more marrows than sensible each time so have a few ideas.Stuff with amix of cous-cous and veg(peas, sweet corn, mushrooms peppers etc)
Steam in slices,in colander over something else is good.
Rum as known now..lol
slice peeled and layer in a dish with cheese and onoins, top with cheese and slow cook in oven then grill top.
Gonna try cutting into 2" thick rings and filling with sage and onion or other stuffing mix and roasting next.
Not as flavoursome as squashes or pumpkin so don' think soup will be any good.
