sweet onion chutney

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

sweet onion chutney

I have just made some onion chutney and it tastes so good i thought i would share it with you all

6 medium sweet onions
4 tbsp butter
2 teasp vegetable oil
1/2 teasp salt
3oz brown sugar

melt the butter and the vegetable oil in a large saucepan or heavy frying pan.
Peel and chop roughly the onions and add to the pan saute them till they are slightly brown add the salt.

reduce the heat and continue to cook stirring constantly until caramel in colour and the onions are tender, then add the brown sugar and continue cooking and stirring untill all the sugar has dissolved

then put into warm jars cover and label.

My other half loves this with a big thick sausage in a homemade roll.

Oooh thanks Maggie, I love a chutney recipe. I have plenty of onions, I think I am off to make this today!
If in doubt ~ use a hammer!
