roasted beetroot
whoa... I never had roasted beetroot before but, I tried it the other nite and it was delish. just boiled them in their skins lightly for a half an hour.. let them cool a bit and sliced them in wedges and drizzled with olive oil, some chopped garlic and some salt, pepper and fresh thyme and roasted at 220 for 25 minutes... was great.

There's a lot of beet about at the mo'. I am toying with the idea of making my own beetroot, parsnip, carrot crisps as they are startlingly expensive to buy and never enough in a packet! Why are they so dear, when the actual veggies are fairly cheap?
I'll let you know the outcome.

Hi Shiney, I too am going to try the beet, parsnip baked chips. I saw a programme 'you are what you eat', gosh, GM must be the most condescending person on earth, don't like the programme but her baked root veg idea was quite good. I work near a very expensive sandwich bar who sell small bags of root veg chips for 90p each, so I will try it out for myself and report back. Pam. x

I mean...how do you make them? Sorry if i'm being a bit thick, but last time i tried baking small slices of anything, it all went disastrously wrong, some of them went mushy, and others burnt...

ooh, plase let me know if its successful. Sounds like a fantastic idea. I love those crisps, but they're tioo expensive to have regularly.

If a potato peeler is too small try one of the cheese slicer things that you can buy in Ikea - its very similar but with a wider cut. I'd love to know how you get on
