Tomato Glut

Hi all

I have too many tomatoes, they are coming out of my ears at the moment, and rather than living on a 10 tomato a day diet for the next month and a half I was wondering if anyone can help me.

How can I store the tomatoes? Any recipe for a sauce or other inventive way to keep them would be great.

I would probably use them for pizza bases / lasanga / spagbol sauce

if you have freezer space you can stew them down in to the equivilent of tinned tomatoes, or if you roast them with a little olive oil and some garlic, then puree them, they turn into a lovely garlicy tomato sauce good for pizza or pasta. then gain i spose you could bottle the above, but i have no experience of bottling things...

Our freezer is filled with tomato sauce! Used for pasta, homemade lasagne, pizza topping etc

We roast all ours on a tray with garlic/basil/whatever, give it a mash and puree it, then plonk it in a freezer bag and hey presto!

I was picking a colander full of cherry tomatoes a day, and even the relatives/friend/work colleagues were sick of them!

We had a glut of plum tomatoes, bagged them up and put em in the freezer! from frozen the skins come off easy!
