I had a bit of a tomato disaster this week, with one of my plants having most of the tomatoes removed by the wind. Having out a lot of effort into getting this far, I've used them to make chutney rather than wasting them. Shoudl be ready in about 30mins :)
My question is, if I put this in sterilised jars when warm, how long will it last, and will it need to go straight into the fridge? It's the river cottage recipe, and it suggests maturing for a minimum of 2 weeks, and ideally 2 months, but it doesn't say how long before it goes bad..
Chutney
Hot chutney into hot jars, cold chutney into cold jars. Don't do it at in between temps, as this can cause keeping and bacteria problems. Once sealed and stored, leave at least 2 - 3 months before trying. Stored in a cool, dry, darkish place, will keep for several years without ever seeing the inside of a fridge. Once opened, though, keep in the fridge.
