You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

beans?

Post: # 27615Post Kirstykbart »

hiya,

I'm just about to be getting to the point of harvesting some beans. They are buff valentine dwarf beans. Anyway, confession time. I've never *ever* cooked fresh beans before  so I've no idea what I need to do, what to eat them with etc. Can anyone help??

Cheers

not sure about dwarf beans as this is the first time I have grown them and they are not nearly ready.

With runners I chop the little ends off and cut them up then steam them. With broad beans I pop them out like peas and steam them. I sometimes add some cumin and chopped fresh corriander to give them a bit of extra flavour. give me a month or two to anwser this question properally.

are they dwarf french beans? (long thing green ones) - if so just top and tail them and then boil or steam them for a few minutes until just tender - and eat them like any other veg. They also work well in quiches and they're great warm with lemon squeezed over them but also really really good chilled in a minty sauce as a tapas.

I think the above works for most beans but I don't like broad beans unless they're picked about 10 seconds before and eaten raw so all I can say of they're that type is eat them young and quick!
