a packet of herring fillets. (can be salted, non salted, smoked, non smoked). chopped into small pieces.
put fish in plastic container. chop lots of fresh parsley onto the fish.
in a glass mix 75% olive oil, 25% white wine vinegar with a little mustard and chopped shallot.
pour all over fish and stir around.
some boiled potatoes, chopped into cubes. waxy ones are best.
when the potatoes have cooled down, add them to the fish. stir around.
+ put in fridge for a few hours.
eat with bread and lettuce (and red wine - something like a gamay is best)
very easy to make, very tasty. quick and healthy.
