Hi,does anyone know if carrot leaves are edible? they smell lovely and it seems such a waste not to eat them !

Yes, they're a little bitter and contain an allergen some people may react too, but you can.

Salad, soup, if you like veggie juices - they're quite nice in carrot and beetroot juice or you can make a tea from them.

EDIT - basically, however you want to use them

I put the carrot tops in juice only if the tops come from my own garden. The tops blend well for the home juice. Only a few tops are used since they can take over.

Juice is made utilizing fruit and vegetables that are available. Each product is blended with water then placed in a large container and mixed and blended a second time to make a the mixture homogenous. Sufficient water is added to make the mixture adequate for drinking. One or two glasses is consumed daily. Any fruit and vegetable is used, except for the pulpy types, which are eaten individually. The mixture stores without deterioration for about 8 days in sealed containers in the refrigerator.
