Baking with Spelt Flour

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

I mix it with my regular bread flour - usually around 3 : 1 wholemeal : spelt. I have used it straight, but you need to adjust your expectations - it'll turn out more like a rye sourdough than "normal" bread. I like it, it's very tasty.

Wouldn't even consider using it for sponge cake though!

I regularly use spelt flour for breadmaking, although I normally mix it with other flour 2 parts spelt flour, 1 part wholemeal flour, or kamut flour (such a great flour!)
