APPLE CHUTNEY
Ingredients:
· 1.5 k of cooking apples
· 500g of onions
· 500g of sultanas
· 750g Demerara sugar
· 500ml of white wine vinegar
· Zest and juice of two lemons
· I small chilli
· 1 tsp ground ginger
· 1 tsp ground allspice
· ½ tsp of cinnamon
· Pinch of ground cloves
· ½ tsp of Maldon sea salt
· 8 peppercorns
· 1 tbsp of mustard seed
Method:
Wash, peel, core and chop the apples fine.
Peel and chop and mince the onions (if you don’t have a mincer chop them very fine).
Put all ingredients into a large heavy bottomed saucepan and bring slowly to the boil, stirring until the sugar is dissolved.
Then simmer very gently, bubbles barely breaking the surface, until the chutney has thickened, stirring every now and then. It is ready when drawing a spoon across the surface leaves a definite track mark. This will take at least four hours.
Pot into warm sterilised jars with plastic lined lids. Label when cold and store in a cool, dry place. Leave to mature for a month.

I use cider vinegar and any old windfalls for this and made 4 x the quantity which has lasted me 2 years (just me, OH doesn't eat this one), as our trees tend towards biennial bearing. I also add walnuts to my apple chutney. I use less sugar cos cooking apples don't exist outside the UK so ours are sweeter.

I usually make apple butter by cooking the apples, pushing them through a colander or food mill, then simmer gently with whatever spices look good at the time, until very, very thick, then can it up.
I haven't been able to do that the last couple of years, but I hope to get into it again soon.

Mango Chutney.
Make apple Jelly, add mango at same time as sugar, (mango 39p each at Lidl)
Beats Sharwoods £2 a jar.
Oh get some pigs they will eat any surpus and then you get pork!

So what did you make then Susie (apart from things with chillies
)?
We've got lovely weather so it's outdoor flower bed time so the apple chutney will have to wait and I have so little room in the freezers for stewed apple, I fear I will have to stew up and bottle all those frozen tomatoes in there!

I made Crab Apple jelly today as well as the Mango "Chelly" as I am calling it now ( Chutney Come Jelly)
