Game Pie?

Back in the winter I made a couple of game pie's a small one to eat then and a large one for when friends came round. I was disappointed with the first pie, it was ok but I was unimpressed with the flavour :dontknow:
We had the other pie tonight on our own, as I have been working nonstop for the last 3 weeks and the cupboard is bare, but the flavour was far superior to the first, can the flavour inprove whilst in the freezer :scratch:
It was pidgeon and rabbit, local of course. Same again tomorrow night :thumbright:

I've never heard of flavour improving by length of time in the freezer, maybe you were just hungrier so it tasted better?

Maybe it was because it was bigger and therefore it cooked for longer and had a better flavour?

Ice crystals - they can rip berries apart and release the juices in the freezer. If the same kind of thing has happened to your pie, then as it thaws the flavours are going to mingle more - a sort of marination by cold. Maybe.

Thinking about it I suspect the flavours do improve, but more slowly :mrgreen: As Pooh say's (our nickname for Hugh FW) a stew is better if left till the next day to allow the flavours to mature :study:

We've found game continues to slowly mature in the freezer. I guess that's why they put that pictogram thing inside the freezer door (the one that we all ignore :lol: )

I always find things do improve in the freezer, and game pie mmmmm :thumbright: one of my favorites, my Indian friends says when they make curries its for a few days time not for the same day as it matures with age and wow do they taste good :tongue:
