Fruity Tea Bread

Thought I'd share this recipe as its so easy to make, tastes fab and seems to go down a storm with everyone.

12oz Raisins or Mixed dried fruit
1/2 Pint of tea
6oz Soft Brown Sugar
1 Egg
12oz S/R Flour

Soak fruit in tea overnight, plus sugar.
Next day add egg, and fold in flour.
Bake approx 1hr @ 180c.

I made this today with raisins, apricots, and my own dried apples and it worked a treat. :iconbiggrin:
Stay at home Mummy to Orin 8, Trixie 6 and Temogen 4 . Also three Chickens Dottie, Poppy and Dr Mumbo. Three cats called Flossie and Pickle and Lexi.

My OH makes a very similar bread, bara brith(?) in welsh I believe, mixing the tea soaked dried fruit into a normal yeasted dough with some cinnamon and other spices to taste. We don't add sugar or the egg, so perhaps less sweet or rich as thesunflowergals, but delicious.
