Delicious mistake

Delicious mistake

"Delicious bread", Rima, my OH, texted me at work. Rima is usually complimentary about my bread but she has never texted me, so I thought she was being sarcastic, as I had almost thrown the dough away because it had over-proved.
I should have waited and baked it the night before, but it was slow rising and in the end I just had to go to bed. Normally I would have put it in the fridge but that was full, so I just had to leave it out in a cold room and hope. In the morning it had obviously over risen and I was in two minds whether to waste the electricity on baking it, but in the end I decided however bad, I would eat it myself.
I baked them just before rushing off to work. Over-proved the dough had no structure and the rolls came out flat as a pancake.
But it was true, not only had Rima thought them delicious but so did someone staying with us, they were almost all gone by the time I got home.
They were naturally leavened rolls and because they had been left longer, they were more sour than usual, which I guess went well with the wholemeal flour. They even liked the crust and texture.
I've been working on this recipe for sometime. But as far as I'm concerned this was a bad mistake that hopefully I won't repeat, but it is strange it went down so well.
