Yum yums

Post: # 188137Post Nick69 »

Hi all,

I made a batch of yum yums today, for those who dont know they are like long donuts covered in icing. My problem is they came out a bit heavy if you know what I mean?

Has anyone made these before?
How could I lighten the dough?

Nick

I just tried googling yum yums and all I got was a franchise opportunity. So, assuming you've not opened up a store, you might have to give us a bit more info

Oooh and your recipe would be good - anything called yum yums ought to be good (although I thought the same about Krispy Kremes(?) and was very disappointed and severely light of purse  )

Sorry,
this is the recipe I used but instead of the pre-mixed flour I used 500g plain flour with 1tsp of salt and 1.5 packets of yeast.

Im thinking about adding a bit more sugar to the dough to make it a bit sweeter. My wife loves the ones I made but think the heavy feeling isnt the dough but the fat which they were cooked in. It soaked some up during frying and made it a bit heavy. Does that make sense?

The recipe above make 16 big yum yums but I needed a bit more than 250g of Icing sugar. I think it was 300g.

If you think it's the frying stage that's the problem, then my guess is your temperature was too low, it needs to be high initially to seal the outside, otherwise the dough just becomes a fat sponge. I didn't read how long they took to cook, I'm guessing not long, so you should be able to keep the temperature on high. And don't put too many in at once - that drops the temperature as well.

Feel free to send me a batch, they do indeed look yummy. I have no deep fat fryer or chip pan type thing :pale: :(

My deep fat fryer only goes up to 190c and I put 2 in. Maybe next time Ill just do them one at a time and see what happens.

Fry each yum yum in oil preheated to 180 - 190°C for 1½ - 2 minutes on each side or until golden brown.

1. Remove from oil and whilst still hot brush each with a liberal coating of the lemon water ice. Repeat until all 16 yums yums have been completed.
Sorry honey, the wording rather suggests doing them individually.

Have you thought of baking scones instead (sorry I'm in a strange mood today - must be the hailstorm  )
