Onion Marmalade

Does anyone have an onion marmalade receipe that will keep for longer and a week if put into sterilised jars?

this is the one we use, in fact will be doing a few batches this weekend, if we get time! it is lovely, easy and quick, and lasts just fine

I can't understand the instructions for that one as they are so vague. What size of mug do you use? I have some mugs that are twice the size of other mugs. :dontknow: Also what do you do after adding the rest of the sugar then bottling. Cook it for longer? It doesn't say! Obviously the sugar needs to melt, but does it need to boil, simmer or what? :scratch:

I couldn't do that at this time of year as all onions are sprouting - my own and all shop bought ones. :( But it does sound interesting although not cheap with balsamic vinegar in it.

I was confused at first and worried about the cost, but found that really cheap vinegar from those horrible big supermarkets worked wonderfully, we use a very small kids cup for the sugar and just simmer, it is all really a matter of taste at the end, if it doesn't taste to our liking just add tiny bits of sugar at a time, give it a good stir whilst still on a low heat and taste again in a couple of minutes, and then when it tastes good bottle it.

We picked up 2kg of onions whilst doing our shop tonight 70p and used a bottle of t£$*os value balsamic, sure thats about 70p as well and have 5 jars of the stuff sat ready for christmas, although the onions were so strong as Rob was chopping them me and my mum were being reduced to tears in the next room!!

Thanks a lot Mr and Mrs Luvpie for clarifying that :thumbright: - I'm going to bookmark this then try to remember to make it when there are some decent onions in the shop or when my home grown red onions are nice and fresh!

thanks for this! I need to get cooking as I have some decent onions in at the moment! Have just finished 8 x 1lb jars of lemon curd and am waiting for my mango chutney and butternut, apricot and almond chutney to mature! Can't wait........ Must get round to making some mincepies too....... lots of homemade mincemeat in the cupboard that is calling to me...... oooooo I love christmas and all the food!!!! No wonder I have to diet for the rest of the year.
