HI folks

looking for some different cookie and cake recipes, tired of making the usual things. Can anyone help?

How funny cos I've been searching for cookie recipes as I'm going to have a bash at making some this weekend. Never done it before! :shock:

Do you have this recipe?

Quick and easy Smartie cookies

500gms butter
1 cup sugar
1 can condensed milk
5 cups SR flour OR 5 cups plain flour and 5 teaspoons baking powder

Toppings could be: smarties or choc chips or jam or sugar or cinnamon, oryou could get some edible christmas decs

Cream butter and sugar together
Add the rest of the ingredients, mix well then use hands to make a dough.
Roll into balls about 1inch in diameter and place on baking tray and flatten with a fork, add your toppings

Bake in the oven 180deg C or gas 5 for 10 mins

Is that sweetened condensed milk i.e. Nestles milk, if so YUM!

I'm going to try the River Cottage choc chip cookies http://community.rivercottage.net/users ... ip-cookies and the other ones I'm going to try are walnut spice cookies which I'll adapt a base cookie recipe from an American site where thankfully with one click you can change the cup measurements to metric! chocolate biscuits full of bad things but very nice

choc chip and hazelnut - we make these with hazelnuts we have gathered but you could buy them

or for really really easy

spicey biscuits really is through into mixer and cut out. my son and i have been cutting them out this after noon in various Christmassy shapes. and he has eaten most of them...

Argh now I've forgotten what they called them (not in my neck of the woods I hasten to add) but we had this discussion at an 'English' barbecue in the summer. Oh yes something like 'Connie Onnie'. It was a new one on me although I too put NM on bread - but way best just eaten out of the tin with a teaspoon. I still do that. :iconbiggrin:

Many years ago, used condensed milk in the workshop but it would disappear as soon as the tin was opened so I stirred in a packet of Liver salts, and watched the foreman running back forth to the toilet. :lol: :lol: :lol:

was about to grab something outta the Edmonds cookbook..... :lol: .....guess i'm not going to be able to offer anything different....i usually suggest ANZACS or afgans!!

I use the Cookie Recipe from The River Cottage Family Cookbook.

It's super quick and easy and I change the chocolate for other things depending on what's in the cupboard, as I do a gluten free version I have so far discovered Galaxy Minstrel - Chip Cookies to be the best !! :love2: :love2: :love2:

I stole this recipie from the net, but my G.ma used to make "swedish peppernuts" from a wee ancient newspaperclipping she had and they were FANTASTIC! this recipie looks quite similar - i would up the Pepper content though - they should be SPICY!


Ingredients:
4 cups all-purpose flour
2 eggs
3/4 cup butter
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cups brown sugar
1 teaspoon white pepper
1 teaspoon cinnamon
1/2 teaspoon cardamom
1/2 teaspoon ground ginger
3/4 teaspoon salt

Preparation:
1. Using an electric mixer, beat the butter and sugar.
2. Add the egg, a cup of flour, the other egg, one more cup of flour, the spices and finally the rest of the flour.
3. Roll the soft dough into a ball, put in a plastic bag, cover and place in the refrigerator for at least 20 hours.
4. Use 1/2 teaspoon of dough for each cookie.
5. roll in balls then roll in white sugar and flatten onto a baking tray
5. Preheat the oven to 320 degrees F.
5. bake for about 11-15 minutes.
