well thanks to all for the advice from my beetroot pickling foray, so i took a bit from here and a bit from there with some old advice as well as new, stuff that i like and stuff that jane likes and came up with this recipie, i don't know if it will work but thats the fun of it i will post the recipie if anyone fancies it, its meant to be a light vinegar so its not as overpowering as malt with a slightly sweet taste the books say its best after about 2 weeks so i shall let you know....................sink or swim
this is enough to make 2 jars to see how it goes if it works we can multiply.
enough cider vinegar to cover beets
1/2 tsp balsamic vinegar
4tsp sugar
8 black pepper corns
1 bay leaf
1 sprig of fennel
1 sprig of thyme
1 sprig of rosemary
boil beets until tender once tender pour away liquer and plung beets into cold water, this will make it easier to peel the skin off, once they are cold slice beets and add to the jars, mix the sugar with the vinegar, add the other ingredients over the beets and the pour over the vinegar to cover the beets then seal the jars
