Just thought I'd let you know I've revised the recipe again and it's now even better.

The recipe is exactly the same quantities as the previous edition, but instead of vital wheat gluten, which is expensive and quite difficult to use, I've started using semolina - similarly high protein content so the dough keeps just as well.

The best news, apart from being cheaper and more easily available, is that it tastes wonderful and the texture's much better - large crumb etc.

Edited to add: The crust's not so chewy either.
