Low Fat Fruit Cake Recipe

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Low Fat Fruit Cake Recipe

SusuieGee's fruitcake sounds fabulous but if you want to make a low fat version that tastes very naughty, then here it is. All measurements are in cups rather than grammes or ounces. It doesn't matter what size cup you use as long as you use the same one throughout.

Ingredients.

1 cup of dried fruit (whatever happens to be in the cupboard)
1 cup of sugar
2 cups of SR flour
Spices (Mixed spice, nutmeg, allspice, ginger or whatever is available)
1 egg
1 cup of strong hot black tea

Method.

Chuck the dried fruit into a mixing bowl.
Add the cup of sugar.
Throw in the spices.
Pour on the tea and mix well to disolve the sugar.

Leave overnight to marinate.

Next day.

Crack in the egg and mix well.
Stir in the 2 cups of flour and mix well again.
Shove into a loaf tin and...

Bung it in the oven at 190 degrees for about 40 mins.

It should be brown on top and moist in the middle. It's called 'Barra Brith' in Wales and tastes better after being left to mature for at least 24 hrs. It can be spread with butter but because it's so moist, we always eat it without. Bloody lovely and the only fat in it comes from the one egg yolk :angel4:

Sounds very easy but one egg cakes are a no-no here - I need recipes which use as many eggs as possible! :lol: So Clafouti gets my :thumbright: as it uses 4. :mrgreen:

I do the overnight tea bread (which is what it is called in my recipe book) without additional sugar - the fruit is sweet enough. Very little fat, wholemeal flour, no sugar - nice, but still healthy! And very popular with everybody who's tried it so far.

It's called Barm Brack in Ireland, and yes it tastes delicious. OH used to eat loads of it when she was restricted to a fat free diet (gall bladder)

Odsox, this is different to barm brack, it's much more moist, almost like bread pudding in the middle.

Ina, I'm going to try this without the additional sugar because if it tastes as good without then it means I can eat three times much :cheers:
