Marrow recipes anyone?

Post: # 165444Post Loobyloo »

I've just bought a 3 and a half pound marrow for 20p! and now I'm wondering what to do with it all. I've got a recipe for a chutney (river cottage website) but that won't use the whole thing. I've never cooked with marrow before so any recipe contributions would be most welcome!

Thanks folks!

I love stuffed marrow.

It's very simple (well my recipe is!) - make a meat or lentil bolognese, but make it a lot dryer than you would for on pasta. Stuff it in the deseeded marrow, double wrap in foil and bake until the marrows tender.

Lovely!

Anybody any ideas what to do with more than 60kg of marrow sized courgettes? :?

They aren't actually mine - they are meant to be sold, but everybody has a glut at the moment, of course...

Marrow curry, or you can blend them to make a sauce for casseroles, bakes etc.

Ah I like these posts I am having the same issues myself! I was planning to make marrow rum from the marrows but still have far too many courgettes.

When blending them for sauces can you use them like you would tomatoes? eg chuck them in with some onion and herbs and hey presto nice base sauce??

Loobyloo if I give you 20p will you come and take away my 15 marrows?

I've made all of the above plus added it to jam, it amkes the fruit go further and you still get loads of flavour.

I quite like roast marrow, throw it in the roasting spuds all diced up for the last half hour- sometimes do it quite firm for a crunchy texture, sometimes roast it brown - bit of variety (ha ha)

marrow curry tomorrow night, make a llad and freeze some for the depths of winter when you can't remember what a marrow glut is

You could do, that sounds nice! I blended them with cooked cabbage and potato for a creamy sauce, I liked it!

I chopped some up into a stir fry, if you don't cook them very long they're really nice!
