Veggie Burgers

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Veggie Burgers

The recipe was made up using aubergines and courgettes (glut veg!) I don't usually follow recipes, so I can't give exact measurements, but as long as you end up with a stiff mix it should be OK. You could add and veg you have an excess of, and change the herbs and spices to your taste.

Here what you need, sorry it's not a proper recipe, but you'll get the idea.................................

Red Lentils
Onions and garlic
aubergines
courgette
Peppers
Chilli (to taste)
Oats
Veggie stock
marmite
curry paste
cumin
ground corriander
Sunflower and pumkin seeds (toasted then crushed)
polenta (of you could use more cous cous)
flour (don't use too much in the mix)
cous cous (If you need to stiffen up the mix
sesame seeds

1. Cook lentils until soft, don't add too much water
2. Whiz up the onions and garlic and fry in olive oil
3. Whiz and add the rest of the veg
4. Shouldn't take long to cook
5. add and mix in the rest of the ingreaients
6. Leave to cool for a while
7. If the mix needs to be stiffer add more cous cous
8. Make burgers then roll in a mix of flour and sesame seeds
9. Shallow fry, of part shallow fry and freeze

The other half said these were the best veggie burgers he had tasted! he can be a creep sometimes! :lol: but I must admit they taste really good.

These sound lovely. Can I ask.... with the veggie stock do you mix with water and if so how much - I guess you don't want the mixture too runny? I might try these and also have a glut of courgettes to use!
