Courgettes again!

I'm looking for help again!. Somewhere here I read a recipe for courgette fritters, but can't find it now! I know it was grated courgettes and gram flour, but that's all I can remember. Any help would be appreciated! pbf.

I don't have a fritter recipe but have you tried courgette soup. It is great when you have more courgettes than you know what to do with at this time of year. Gently heat the cougettes with butter and olive oil until mushy, blend (i use a hand blender) then add a little bit of water and handful grated parmesan cheese (to taste) and enjoy :sunny:

And lots of basil! Silly me I have been forgetting that I can make soup with mine. Gave loads away at a BBQ the other day and was really pleased with myself, then found 3 more lurking in the fridge when I got home! Never mind by today I'll be picking about 3 more...... :pale: :lol:

Thanks for soup recipe. I have just been down the garden and found two round yellow courgettes that I don't remember planting!. pbf.

Red, that is exactly it, thankyou so much!. With the yellow one, I sliced it into rounds, covered them with pesto, cheese, sliced mushroom and tomato, - courgette pizza! Only did one each as I wasn't sure, but they were lovely! pbf.

I've got some of those Ina! Worth a go. I usually get the best ideas for using up things just as they are finishing, but have got in early this year! pbf.
