storing beetroot?

finally got some good beetroot and not sure how to store it or if it will store?Globe beetroot is the variety any ideas??
Grow it,make it ,eat it, drink it and sleep well!

I've never actually tried storing it - though you may be able to lay it in sand like carrots - but its ok in the ground for a while yet

We either eat it as we go - or pickle it or steam it, then freeze it

If you like beetroot chutney thats the way I go, problem is I love it so much I can just sit there eating spoonfulls!
Made one batch last weekend, and will make another this weekend I think.

Ah I worked to a couple of recipes strictly last year...have got a bit 'ad-lib' this year (I find rules so hard!)

Here's two I based mine on:

I've thown in a few sultannas sometimes, experimented with different vinegars (cider & white wine), added ginger & cloves, think I also added garlic once- everything was nice so now I just use what I have lots of :lol:

Ooh thanks I never thought of chutney I'll give it a go.I wanted to store some as I like it roasted with onions,parnips etc with a hearty roast so thought of winter but if I leave them in the ground will it stop growing if I cut off the leaves as I understood if they get too big they go all woody and tough?

I leave some in the ground and they have never been woody or tough. They are normally ones I've sewn quite late (July-ish) and they seem happy to site there without any top-trimming til about Jan/Feb. I guess come spring they will resprout and get woody then like parsnips but normally they are long gone by then :mrgreen:

I love roast beetroot too, so far this weekend we've had beetroot in sandwiches, salad, I've made another batch of chutney (this time added garlic and a few cloves- yum), then I made a beetroot cake (like carrot cake) so resisted roast beetroot last night....have got sweet & sour beetroot planned for tomorrow though....

The beetroot cake sounds good can I have the recipe please.Just sold my last jar of onion chutney today so going to get on with the beetroot chutney but will add chillis and garlic to the first one you listed before.

I Used this one http://www.allotment.org.uk/recipe/1313 ... ke-recipe/ except I didn't have ground nut oil so I used olive oil and couldn't find any hazelnuts so used flaked Almonds.....told you I was bad with sticking to rules! Oh I also decided I didn't want frosting and would rather have a big thick cake rather than two sandwich layers so I just baked it a bit longer in a big tin- really goes well with a sloe gin!

I've seen a few recipes for chocolate and beetroot brownies, so they are next on the list to try!

I always used to keep it in sand, but now I don't bother and leave it the ground. Both seem to work equally well, and one's less labour intensive!
