It's frothy, jam!

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

It's frothy, jam!

Post: # 158990Post JeremyinCzechRep »

Returning home after a week away, I had no electricity, and hadn't for probably 3 days. There was still some ice in my freezer and things were still cool, though not frozen. I'm not willing to risk the thawed fish or various soups. pieces of meat but I used all the soft fruit (probably 10kg in all) to make a variety of jams. One tip I picked up to avoid the froth on the top of the boiling jam: add a dribble of olive oil. You don't notice it in the jam but it does prevent a lot of froth from forming, allowing your jam to bubble away happily without boiling over.
When you're sitting in your car, don't complain about the traffic. You are the traffic.
Have a look at my website with lots of photos, recipes and books

I'd heard that before - but, but, but... I remember so well when my mum used to make strawberry jam, and the very best bit of it was the froth on top! I'm always sad that you don't seem to get that any more... :(
