Hi, My DD1 would like to make her Dad a humungous cake for Father's Day, but if we double the quantities from 4:4:4
to 8:8:8 what temp and time do we need to cook it please, we cook on leccie in C

I'm presuming you're making it in sandwich tins, the shallow ones?
If so the cooking time will be the same - 15-20 mins.

I make double quantities and use the same oven temperature and cooking times. My tins are the shallow ones, but are larger than those suggested in my recipe book. Double the quantity, for me, makes 3 sponges, which gives a lovely tall cake when sandwiched together. I recently made one with home-made rhubarb and vanilla jam filling, chocolate coating on the top, and chocolate butter icing around the edge, covered in choccy sprinkles. Lovely.
