So what do you all do with your horseradish?
We have ours planted in a very large pot that is sunk into the ground in the herb garden. We do that to help prevent the spread of it throughout the garden and to keep it contained as much as possible. I have a 5 year old plant that we hadn't harvested yet. I went out to divide the plant as it's getting too big for the pot. The roots are HUGE, so I divided the plant and harvested some of the roots for kitchen use.

I'd love some ideas on processing horseradish and what are the various uses you all put it to. Do any of you eat the tops?

ah how i envy you . i moved house and dug up my horseraddish to take with me, but it all died . if i was you id go out strok the leaves lovingly and appreciate your five year old plant , and smile knowingly,

I too am currently bereft of horseradish :(

When we did have some though, we dug it up every year, peeled it (outside), stuck it in the food processor to pulp it and then bottled it in vinegar. Keeps well and you can use it as is or put it in other things.

I just keep digging it up every year so it's hard pressed to get out of control. If you need a new source then I bought some fresh root from our indoor market, used half planted half and "Bobs your live in lover!"
It's not easy being Cheezy
So you know how great Salsify is as a veg, what about Cavero Nero,great leaves all through the winter , then in Spring sprouting broccolli like flowers! Takes up half as much room as broccolli
