Has anyone got any ideas what I can use this in please? I am over run with the stuff, and it would be good to put it to some use.
Thanks Nikki

Re: Lemon Balm
Tea, of course, same as you'd use peppermint etc.
Also in pasta is lovely - cook pasta as usual, gently saute some onions in a little olive oil and/or butter. Drain the pasta and combine with the onion (and any other cooked veg you fancy I suppose) and oil and just before serving chuck in a big handful of chopped lemon balm leaves and toss. Delicious.
You can also put chopped meat or cheese in if you want.

Re: Lemon Balm
I bought this delicious but expensive rose and lemon balm cordial for the birth, been meaning to make my own ever since.

Re: Lemon Balm
You could make your own lip balm, if you fancy something a bit different. I'm just waiting to have enough of the stuff to make some. I've only got a smallish pot. Here is a link to the recipie.

Re: Lemon Balm
Makes a lovely bath, just make a strong tea and add or tie up in muslin cloth (or old tights) and tie to the hot tap.
Tea to drink is great, Culpeper says it's good for the heart, stomach and head - helps digestion, lifts mood, helsp concentration and it's a brilliant anti-viral for cold sores. The essential oil costs £60 per 5ml, so crush some in your hand and breath it in!

Or Lemon Balm Schnapps: http://www.danish-schnapps-recipes.com/lemon-balm.htmlYou could use it to make Hugh Fernely-Whittingstalls ice lollies, he used pure fruit juice by boiling lemon juice from real lemons in one pan and plum and wild blackberry as fruit in another with sugar, seived them then added the lemon balm to the separate mixtures. He then half froze them (each mixture in separate cups), inserted sticks at this stage so they would stand upright, then froze entirely.
They looked delicious and very refreshing for the type of weather we're having now!
