interesting parsnip recipes?

interesting parsnip recipes?

i have a parsnip left and it's humungous. it's a foot long and about 2.5" at its largest diameter... my veg box gets delivered today, what the heck can i make with it? or is it better to peel, blanch and freeze it?! :?

also i am expecting to get a lot of bananas (fairtrade) or oranges (also fairtrade) this week cos i requested not to have apples... should i make lots of nanacake and freeze it? anybody got any nana recipes?!

Spiced parsnip soup is tasty: Curry spices work well in it, I usually add ginger and turmeric and blend it up so its nice and smooth.

As for nana's I like them in homemade smoothies: add yogurt, honey and enough milk to make it runny enough to drink.

(although you really can't go wrong with banana loaf! Mine's never as good as my mums though)

A recipe for bannana and parsnip brownies would solve these problems at a stroke! :mrgreen:

If you have any dates about the place then bannana and date loaf is a wow (plenty of recipes on the WWW) and I have used raisins instead of dates before (best to saok them in juice beforehand).

I agree about curried parsnip soup. Fantastic.

Love parsnip soup too - my favorite.

I use parsnips in curry - if you are veggie you could leave the meat out!

But my all time favorite is roasted with honey or salt or just olive oil - had them for tea tonight. They also re-heat really well too.

my favorite is parsnip/ potato puree :) equal weights of both or eyeball it out my daughter loves it.

I freeze leftover ripe bananas sliced up one banana a person so you can freeze three if you have a family of three (but if you have a huge family it's better to do batches.)........you can make very quick banana icecream by putting this in the kitchenmachine and puree it frozen and all, eventually add some milk to smoothe it up a bit.
sometimes I drizzle with maplesyrup and chopped nuts, too.

Hi there
My Fav Parsnip recipe is creamy baked

Put simply
Get some milk, a bit of cream (if you fancy) some stock, a couple of tsp of wholegrain mustard (to taste) and some cheese...put all into pan and bring to boil (you want a saucy consistancy)
Chuck in sliced parsnips and add some seasoning and nutmeg, cover and cook for about 6 mins.
Chuck it all in an oven dish, put more cheese on top and bake (about an hour)

Scuse the lack of quantities and weights, i can't cook that a way :mrgreen:
Had this with Xmas dinner twas fab, made it a few times since, was more fab :cheers:

Interesting ... may be forced to try that sometime.

My favourite is parboil parsnip chunks, drain and immediately toss in grated Parmesan and then roast in oil.
They have to still be wet to make the cheese stick.
